Myllyn Paras Durum wheat flour is made from durum wheat, the grains of which are glassy translucent and harder than the grains of ordinary wheat. Durum wheat flour is more yellow in color than flour made from regular wheat. Durum wheat has a low stretchable binder content, so it is well suited for the preparation of fresh pasta and as a raw material for fluffy non-stretchable pizza bases. Durum wheat flour is also suitable for other baking where you don't want a stretchy texture.
