Galbani Selezione Parmigiano Reggiano DOP is matured for 30 months. As an indication of the long ripening time, the cheese has small crunchy white protein crystals. The long aging gives the cheese a rich and sweet flavor, making it particularly suitable for cooking, e.g. on top of and in pasta dishes or with gratin. Parmigiano Reggiano is made from unpasteurized cows milk and it is naturally lactose free cheese.
