Delicious vine leaf rolls of the Mediterranean diet are made with these vine leaves. The vine leaves are picked while the leaves are still soft, cleaned, stacked and rolled up for future use.
Vine leaves are preserved very well in mildly salted water. Take the leaves out of the jar one roll at a time and put them in salt water for a while, so they come apart easily.
You can wrap rice, bulgur, quinoa, fish or even chicken in a wine leaf. See the Filos wine leaf roll recipes on the Filos.fi website.
In Greek home cooking, wine leaf rolls are often served with avgolemono, i.e. a fresh sauce made from egg and lemon. You can see the recipe for this sauce in Filos recipes at www.filos.fi.
