Gelatin is the most commonly used gelling agent. Dr. Oetker gelatin leaves are made from pig skin connective tissue. The gelatin leaves are first softened in cold water. Excess liquid is squeezed out of them and they are mixed with the hot liquid to be thickened. Softened gelatin leaves can also be heated in a small amount of water in a microwave oven and added after heating to the liquid to be thickened. It takes about 4 hours for the gelatin to set in the refrigerator and the jelly gets harder over time.
