Gelatin is the most commonly used gelling agent. Dr. Oetker gelatin powder is made from pig skin connective tissue. Gelatin powder is first swollen in liquid, after which it is heated and added to the mass to be thickened. It takes about 4 hours for the gelatin to set in the refrigerator and the jelly gets harder over time.
