Fior di latte Mozzarella is a gourmet mozzarella made according to old production principles (e.g. acidified with lactic acid culture). This gives it a creamier texture and distinctive flavour. The elastically textured cheese finds its way mostly into pizzas and other warm dishes due to its excellent melting properties. Fior Di Latte cheese can also be enjoyed on its own - for example with a little olive oil and a pinch of salt and pepper - but best melted with warm dishes.
