Filos Kalamata olives come from Greece, specifically from the Peloponnese peninsula and the abundant olive groves of Aetolia-Acarnania. The Kalamata olive is one of the most esteemed olive varieties in the world, named after the capital of the Messinia region, Kalamata.
These olives are allowed to ripen on the tree until they achieve the characteristic dark color of the variety. The fruit is significantly softer compared to, for example, green olives picked at the beginning of the harvest season.
