Goat cheese with a nice thin layer of white mold. When young, the cheese has a core and a slightly crumbly consistency that becomes softer with time. The taste changes during maturation and goes from fresh and mild to a more characteristic round taste of goat's cheese. Good for the cheese buffet, crumbled in a salad or melted on a hot steak.
